This is a healthy and yet a simple dish that you can enjoy with a glass of red wine after a hard working day. A flavorful seasoned minced beef with wine reduction sauce which pairs usually with a pasta dish, but instead I stuffed it in an oven baked eggplant which is low in calories and carbs and also contains important nutritions such as iron, calcium and other minerals that are essentials for the body.
